Zesty Grilled Sardines
- 1 lemon, zest and juice
- 1 red chilli, finely chopped
- 1 crushed garlic clove
- 2 tbsp olive oil
- 8 x 100g sardines, gutted
- Tabasco sauce
- Salad leaves, to serve
- Mix the lemon zest, 2 tsp lemon juice and the chilli, garlic and oil in a bowl. Season well. Cut small slashes into the sides of each sardine and rub the zesty oil mix all over the fish, rubbing into the slits and cavity. Grill on a barbecue for 3 mins on each side, then serve with a drizzle of tabasco and some salad leaves.
