Zesty Prawn and Grapefruit Salad
- 3 tbsp sesame oil
- 1 tsp tamarind
- 1 crushed garlic clove
- 3cm piece of ginger, grated
- 3 tsp Thai fish sauce
- 1 large lime, juice only
- 2 avocados, thinly sliced
- 2 red grapefruits, peeled and sliced into rounds
- 150 cooked and peeled king prawns
- 8 sliced radishes
- 2 tbsp sesame seeds
- Small bunch of coriander, chopped
- Combine the tamarind, sesame oil, ginger, garlic, lime juice and fish sauce, and season to taste. Arrange the avocado, grapefruit, prawns and radishes on a serving platter, and drizzle with the dressing before scattering over the coriander and sesame seeds. Serve immediately.
