Zesty Prawn and Grapefruit Salad

  • 3 tbsp sesame oil
  • 1 tsp tamarind
  • 1 crushed garlic clove
  • 3cm piece of ginger, grated
  • 3 tsp Thai fish sauce
  • 1 large lime, juice only
  • 2 avocados, thinly sliced
  • 2 red grapefruits, peeled and sliced into rounds
  • 150 cooked and peeled king prawns
  • 8 sliced radishes
  • 2 tbsp sesame seeds
  • Small bunch of coriander, chopped
  • Combine the tamarind, sesame oil, ginger, garlic, lime juice and fish sauce, and season to taste. Arrange the avocado, grapefruit, prawns and radishes on a serving platter, and drizzle with the dressing before scattering over the coriander and sesame seeds. Serve immediately.
