Zucchini and Prawn Linguine

  • 2 tbsp olive oil
  • 500g grated zucchini
  • 1 grated garlic clove
  • 1 chopped red chilli
  • 180g linguine
  • 150g raw peeled king prawns
  • 1 lemon, zest and juice
  • ½ bunch of chopped parsley
  • Fry the zucchini in the oil for 5 mins, then stir through the chilli and garlic. Meanwhile, cook the pasta in boiling salted water until al dente, then drain and reserve a little cooking water.
  • Add the prawns to the zucchini, cook for 2 mins or until pink, then toss through the pasta, lemon juice and zest, the parsley, some salt and pepper and a splash of cooking water. Serve immediately.
