Zucchini Fries

  • 225g zucchini
  • 1.5 tbsp flour
  • Veg oil for deep frying
  • 2 tbsp grated parmesan
  • Slice the zucchini into 7cm x 3mm chips. Pop the flour in a bowl and beat in 50ml of water to make a smooth and thick batter.
  • Heat a saucepan half-filled with oil to a sizzling temperature. Drop the zucchini chips into the batter and turn to coat, then sizzle in the hot oil for 2 mins or until golden. Drain on kitchen paper, season well with black pepper and sprinkle with the grated cheese - perfect!
