Amatriciana Bucatini
- 2kg tomatoes, roughly chopped
- 250g smoked bacon, cut into strips
- 2 small red chillies
- 200g grated pecorino
- 500g bucatini
- Chuck the tomatoes into a food processor and whizz to a fine pulpy mixture. Sieve into a pan, pressing through as much as you can. Simmer for 30 mins, or until reduced by a third. Meanwhile, put the bacon in a frying pan with the whole chillies and cook the meat until golden. Stir in the tomato sauce, and simmer for 5 mins.
- Cook the pasta in boiling salted water until al dente. Drain and tip into the sauce, sprinkle with most of the cheese and stir well. Remove the chillies, dish the pasta onto serving plates and sprinkle with the remaining cheese. Perfect!
