Apple, Fennel and Walnut Salad

  • 50g walnuts
  • 1 fennel bulb, thinly sliced
  • 1 sharp green apple, cored and sliced
  • 1 sweet red apple, cored and sliced
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp honey
  • 80g shaved parmesan
  • Preheat the oven to 180C. Spread the nuts on a baking tray and cook for 8 mins to lightly toast. Meanwhile, add the fennel and apples to a large bowl.
  • Mix the oil, vinegar and honey in a bowl and season well, then pour over the apple and fennel slices and toss well. Top with the toasted chopped walnuts, add the shavings of cheese and serve immediately.
