Ingredients
Method
- 2kg whole chicken legs
- 800g peeled potatoes
- 3 onions, peeled and quartered
- 120g pitted prunes
- 30g grated ginger
- 100ml soy sauce
- 90ml pomegranate molasses
- 1 tbsp maple syrup
- ½ tsp whole peppercorns
- 120g mango chutney
- 20g oregano sprigs
- Preheat the oven to 200C. Mix all the ingredients together in a bowl, then tip into a casserole. Cover with the lid and bake for 10 mins, then reduce the heat to 180C and cook for 2 hours more, stirring every 20 mins or so.
- Remove the dish from the oven and stir once more. Cover and set aside for 15 mins to rest and to allow the flavours to develop. Garnish with some oregano leaves and serve with crusty bread - delicious!
