Asian Tuna and Noodle Salad
- 2 x 200g tuna steaks
- 50ml soy sauce mixed with a knob of grated ginger and 2 crushed garlic cloves, plus 2 extra tbsp
- 2 chopped red chillies
- Chopped coriander
- 2 limes, juice only
- 80g rice noodles
- Bunch of mint, leaves chopped
- Pop the tuna steaks in a bowl and cover with the soy sauce, ginger and garlic marinade. Leave to marinate for 20 mins. Meanwhile, make the dressing by chucking the chilli, soy sauce and chopped coriander stems into a jug with the lime juice, and whisk well.
- Cook the noodles according to packet instructions, then drain and mix in a bowl with the coriander and mint leaves. Griddle the marinated tuna for 2 mins on each side, then remove from the pan and slice. Divide the noodles between 2 dishes and top with the sliced tuna and a good drizzle of your dressing. Easy!
