Asparagus and Crab Salad
- 3 tbsp quality mayo
- 1 lemon, zest and 2 tbsp of juice
- 2 tsp mustard
- 2 tbsp olive oil
- 250g trimmed asparagus spears
- 200g white crab meat
- 4 sliced spring onions
- 1 red chilli, thinly sliced
- 30g coriander leaves
- 50g rocket salad
- Mix the mayo, lemon juice and zest, oil and mustard in a bowl. Season and set aside. Shave the asparagus with a veg peeler into long strips and transfer to a mixing bowl. Squeeze any excess liquid from the crab meat and add to the asparagus, along with the chilli, coriander and spring onions. Drizzle with the dressing and toss together.
- Place the rocket salad and asparagus mixture on serving plates, then season and serve immediately with toast or crackers.
