Asparagus and Crab Salad

  • 3 tbsp quality mayo
  • 1 lemon, zest and 2 tbsp of juice
  • 2 tsp mustard
  • 2 tbsp olive oil
  • 250g trimmed asparagus spears
  • 200g white crab meat
  • 4 sliced spring onions
  • 1 red chilli, thinly sliced
  • 30g coriander leaves
  • 50g rocket salad
  • Mix the mayo, lemon juice and zest, oil and mustard in a bowl. Season and set aside. Shave the asparagus with a veg peeler into long strips and transfer to a mixing bowl. Squeeze any excess liquid from the crab meat and add to the asparagus, along with the chilli, coriander and spring onions. Drizzle with the dressing and toss together.
  • Place the rocket salad and asparagus mixture on serving plates, then season and serve immediately with toast or crackers.
