Aussie Chocolate and Marshmallow Pudding

  • 140g melted butter
  • 375g self-raising flour
  • 180g caster sugar
  • 2 tsp baking powder
  • 5 tbsp cocoa powder
  • 360ml milk
  • 3 beaten eggs
  • 1 tsp vanilla extract
  • For the Topping
  • 450g light brown sugar
  • 6 tbsp cocoa powder
  • 2 handfuls of marshmallows
  • Butter a large baking dish. Sift the sugar, baking powder, cocoa powder, flour and a pinch of salt into a bowl. In a separate bowl, mix the melted butter with the milk, eggs and vanilla. Mix the wet and dry ingredients together, then pour into the baking dish. Boil the kettle and heat the oven to 180C.
  • Sprinkle the sugar and cocoa powder all over the top of the pudding, then pour 700ml boiling water over the top. Bake in the oven for 45 mins, or until the pudding has puffed and is set in the middle. Scatter over the marshmallows and return to the oven for a few more minutes to melt, then serve hot with ice cream - delicious!
