Method

  • 1 cucumber, thinly sliced
  • ½ tsp sea salt
  • 150ml soured cream
  • 2 grated garlic cloves
  • 1.5 tsp white wine vinegar
  • Pinch of sugar
  • 10g chopped dill
  • Add the finely sliced cucumber rounds to a sieve and place over a bowl. Add the salt and massage into the cucumber, then set aside for about 20 mins. When ready, firmly squeeze the cucumber to remove as much excess water as possible, then transfer to a bowl.
  • Stir the cream, grated garlic, vinegar, sugar, dill and some black pepper into the cucumber, then chill until ready to serve. Perfect with grilled sausages, quiche and all kinds of picnic or barbecue dishes!
