  • 2 ripe avocados, halved and stones removed
  • 4 eggs
  • 4 tsp cream
  • 2 cherry tomatoes, quartered
  • 20g grated cheddar
  • 1 sliced spring onion
  • 4 pinches of chilli flakes
  • Salt and pepper
  • Preheat the oven to 200C. Scoop out about 1 tbsp of flesh from each avocado half, trying to scoop an even layer across the surface rather than pushing downwards with the knife (you can use these 4 tbsp of avo in a guacamole, or whatever you fancy!) Season your avo halves with salt and pepper, then add 1 tsp of cream to the cavity, followed by an egg, a quarter of tomato, ¼ of your cheese, some spring onion, and some chilli flakes. Repeat with the other avo halves.
  • Bake your avo eggs in the oven for about 12 mins, or until just cooked. Serve immediately with all your favourite brunch items!
