Bacon and Leek Quesadilla

Method

  • 1 tbsp butter
  • 1 leek, sliced
  • 3 rashers of bacon, chopped
  • 1 tbsp wholegrain mustard
  • 1 tbsp chopped parsley
  • 30g grated cheddar
  • 30g grated mozzarella
  • 2 flour tortillas
  • Heat the butter in a frying pan, and fry the leeks for about 10 mins to soften. Transfer to a bowl and leave to cool. Meanwhile, fry the chopped bacon until crisp, and then mix the leeks with the cheeses, parsley and mustard. Spread the mixture all over a tortilla, then top with the bacon and sandwich with the second tortilla.
  • Reheat the frying pan, and add the quesadilla to cook for about 2 mins on one side. Flip, cook for 2 mins on the other side or until the cheese is gooey. Slice into four, and serve with a fresh avocado salad.
