Bacon, Leek and Cheese Tart
- 1 tbsp olive oil
- 3 sliced leeks
- 375g ready-rolled puff pastry
- 150g garlic and herb cream cheese
- 4 rashers of smoked bacon, chopped
- 100g grated emmental cheese
- Preheat the oven to 200C. Heat the oil in a pan and fry the leeks for 5 mins, or until softened, then leave to cool. Unroll the pastry and spread with the soft cheese, leaving a 3cm border around the edges. Scatter with the bacon, grated emmental and leeks, then fold the edges to make a crust and bake for 20 mins or until puffed, golden and the bacon has cooked.
