Baked Camembert

  • 10 ripe figs
  • 2 tbsp sherry vinegar
  • 100ml red wine
  • 50g walnut halves
  • 4 thyme sprigs
  • 4 tbsp honey
  • 1 whole round camembert or soft creamy cheese
  • Crusty baguette, to serve
  • Preheat the oven to 200C. Cut the figs in half, and layer, cut side up, in a baking tin. Mix together the wine and the vinegar, add some seasoning, and pour all over the figs. Scatter over the walnuts and thyme, and finally drizzle over the honey. Bake for 20 minutes, until everything is soft and sticky.
  • Pop the whole cheese on top of the figs, and bake in the oven for another 5-10 minutes. Serve with lots of crusty bread, and encourage everyone to dive right in!
