Baked Fish with Mango Crust
- 4 x 150g firm white fish fillets
- 1 green chilli, chopped
- 1 mango, diced
- 1 tsp ground cumin
- Small piece of ginger, grated
- Handful of mint leaves, chopped
- 1 tbsp mango chutney
- ½ lime, juice only
- 85g stale white bread, torn
- 1 tsp garam masala
- ½ tsp ground turmeric
- 1 tbsp olive oil
- Preheat the oven to 200C. Pop the fish in a roasting tin, and mix the chilli, mango, ginger, cumin, mint, chutney and lime juice before spooning about a quarter of it on top of each fillet. Pat the relish down with your fingers.
- Whizz the bread, garam masala and turmeric in a food processor to a fine crumb. Add the olive oil, whizz again, then spoon this mixture over the top of the relish on the fish. Cover with foil, bake for 10 mins, then remove the foil and bake for 5 mins more. Serve with green salad and enjoy!
