Baked Gnocchi with Tomato and Basil

Ingredients

Method

  • 1 tbsp olive oil
  • 1 chopped onion
  • 1 chopped red pepper
  • 1 crushed garlic clove
  • 500g premade gnocchi
  • Handful of torn basil
  • Torn mozzarella
  • Preheat the grill to high. Heat a tbsp of olive oil in a frying pan and cook the onion and red pepper for about 5 mins. Stir in the garlic clove, fry for another minute, then stir in the chopped tomatoes and gnocchi. Bring the mixture to a simmer and cook for 15 mins.
  • Season the mixture with salt and pepper, then stir through some torn basil leaves and tip the whole lot into an ovenproof dish. Scatter with pieces of torn mozzarella, then grill for 5 mins or until the cheese is golden.
