Baked Parmesan Salmon
- 5 skinless salmon fillets (approx 150g each)
- 150g cream cheese
- Salt and pepper
- 1 crushed garlic clove
- 1⁄2 lemon, grated rind only
- 25g breadcrumbs
- 25g grated parmesan
- Paprika
- 2 tbsp chopped parsley
- Preheat the oven to 200C, and place the salmon fillets on a lined baking tray.
- Mash together the cream cheese, the garlic, the lemon rind, and some salt and pepper, and smear the mixture over each salmon fillet. Next, mix the breadcrumbs, the parmesan, and the parsley in a small bowl, season well, and spread over the top of the cream cheese. Dust with paprika, bake in the oven for 15 minutes, and serve with more parsley as a garnish.
