- 175g mozzarella, grated
- 1 chopped tomato

Time: 1 hour
First of all, get your oven nice and hot by pre-heating it to 180C, and line a wide baking dish with parchment or a piece of foil.
Take your chicken breasts, and really smother then with your favourite pesto. Be liberal here - you need them totally covered. Season well to taste, and place in your baking dish.
Stick the breasts in the oven, and bake for 30 minutes. Once this time has passed, take them out of the oven, and sprinkle half of the mozzarella over them, followed by the chopped tomato, the chopped herbs, and then the other half of the mozzarella.
Place the chicken back in the oven for another 20 minutes or so, until the chicken is cooked through and all the cheese has melted. Serve with a fresh salad and a glass of wine, and enjoy the ultimate Italian-inspired comfort food!
