Baked Scallops



  • 2 scallops, cleaned and left in shell
  • 25g butter, melted
  • 1⁄2 red chilli, chopped
  • 50g breadcrumbs
  • Salt and pepper
  • Handful of watercress or rocket
  • Preheat your grill. Place the scallops on a baking sheet, and top with the butter, chilli, breadcrumbs, and plenty of seasoning.
  • Place under the grill for about 3 or 4 minutes, or until just golden. Serve with a big handful of watercress or rocket, and enjoy.
