Baked Trout with Lemon and Herbs

Ingredients

Method

  • 1 whole trout
  • A few dill and parsley sprigs
  • 1 lemon, sliced
  • Splash of olive oil
  • Salt and pepper
  • Potato salad, to serve
  • Preheat the oven to 180C. Season the trout on the inside and outside, then stuff with the fresh herbs and a few slices of lemon.
  • Add the fish to a lined roasting tin, then toss in the remaining lemon slices. Drizzle with olive oil and roast for 20-25 mins, then add to a serving platter, butterfly the trout and serve with potato salad and the roasted lemon slices.
