  • 2 beef frying steaks
  • 1 tbsp oil
  • 1 tbsp soy sauce
  • 2 small carrots
  • 1 mango
  • 5 spring onions
  • 1 small green lettuce
  • 50g salted peanuts
  • For the Dressing
  • 1 lime, juice only
  • 1 garlic clove
  • 1 tbsp sugar
  • 1 tsp dried chilli flakes
  • Pop the steaks in a dish with the oil and soy sauce, and rub to coat all over. Set aside for 10 mins. Meanwhile, peel the carrots into ribbons, separate the lettuce leaves and slice the spring onions and the mango. Mix the fruit and vegetables in a salad bowl.
  • Fry the steaks for a minute on each side then leave to rest for a few mins. Meanwhile, grate the garlic into a small bowl with the lime juice, chilli flakes and sugar. Mix well to combine, then pour over the salad in the bowl and mix in the peanuts. Slice the steak and add to the bowl with the resting juices. Toss well and serve immediately.
