Barramundi Fillets in Lemon Butter
- 220g barramundi fillets
- 2 tbsp butter
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 5 basil leaves, chopped
- 1 crushed garlic clove
- Salt, to taste
- Melt the butter in a saucepan and gently fry the garlic for a minute to soften. Stir in the lemon juice and basil, add a pinch of salt, and set aside.
- Pat the fish fillets dry, and drizzle with a little olive oil. Fry for 3-4 mins on one side, then flip and fry for 2 mins on the other until golden. Serve on a plate, drizzled with your sauce and scattered with a little more basil - so simple, so delicious!
