Bean and Chorizo Burgers

  • 100g chorizo, skin removed
  • 3 pork sausages, meat squeezed from skins
  • ¼ tsp smoked paprika
  • Small bunch of chopped coriander
  • ½ tin of mixed beans, drained
  • 1 egg, beaten
  • 1.5 tbsp olive oil
  • Buns and relishes etc, to serve
  • Pop the sausagemeat, chorizo, paprika, and coriander in a food processor, and blitz until well combined. Pour in the beans and some seasoning, and blitz again. Tip into a bowl, stir in about half the egg, and mix with your hands to combine. Shape into 2 plump burger patties, and cover and chill in the fridge for 15 mins.
  • Heat the oven to 200C. Splash a little oil into a pan, and fry your burgers for 3 mins on each side to seal, then transfer to the oven for 10 mins to cook through. Serve in buns with all your favourite sauces and sides.
