What you'll need:

  • 1 tbsp olive oil
  • 50g cashew nuts, unsalted
  • 1 head of broccoli, split into florets
  • 400g frying beef, cut into strips
  • 4 celery sticks, sliced
  • 150ml beef stock (cubes are fine!)
Serves: 4
Time: 15 minutes

This one-pot goodness is going to pair beautifully with this Aussie Shiraz, the Small Change Shiraz 2016. A great Shiraz works best when they’re paired with big, bold meaty dishes such as this Beef and Broccoli one-pot!

Method

First

Heat the oil in a large frying pan, and when nice and hot, add the cashews and lightly fry for a couple of seconds. Once toasted, set aside.

Second

Season your strips of frying steak with plenty of salt and pepper, and then fry over a high heat for just two minutes until browned. Once done, set the beef aside with the nuts. Into the pan next go the broccoli and celery, which need to be stir-fried for 2 or 3 minutes.

Third

Pour the stock into the pan, cover and simmer on a moderate heat for 2 or 3 more minutes. Add the steak to the pan, and give it a good mix with the veggies. To serve, put the steak strips and vegetables onto a plate, spoon over some of the cooking sauce, top with cashews and spoon up some freshly made mustard mash on the side. A proper hearty dinner!
