Beef and Veggie Burgers

Ingredients

Method

  • 2 tbsp oil
  • 1 crushed garlic clove
  • 1 chopped onion
  • 100g grated zucchini
  • 1 grated carrot
  • 50g finely chopped mushrooms
  • ¼ bunch of chopped parsley
  • 75g grated cheddar
  • 1 egg, beaten
  • 5 tbsp breadcrumbs
  • 250g quality beef mince
  • 4 burger buns
  • Salads and relishes, etc, to serve
  • Heat 1 tbsp of oil in a frying pan, and cook the vegetables with the parsley for 8 mins, seasoning to taste as you go, until softened. Set aside to cool. When ready, mix the vegetables, cheese, breadcrumbs, meat and egg with some seasoning to combine, then form into 4 patties.
  • Heat the remaining oil in a pan, and cook the patties for 4 mins on each side until cooked through and browned all over. Stuff into burger buns with all your favourite sauces, and enjoy with a big pile of chips. Nice!
