Ingredients
Method
- 250g beef mince
- 2 tbsp horseradish sauce
- 2 crushed garlic cloves
- 1 sliced red onion
- 1 tbsp olive oil
- 250g cooked beetroot, cut into wedges
- 400g tin of chickpeas, drained
- Mint leaves, chopped
- Tzatziki, to serve
- Pita, to serve
- Preheat the oven to 220C. Mix the mince, seasoning, half the horseradish and almost all the garlic in a bowl, and roll into 8 meatballs. Transfer to a baking tray with the onions, drizzle with olive oil and roast for 10 mins.
- Add the chickpeas and beetroot to the tray and toss together with some more seasoning. Roast for 15 mins, then serve with tzatziki, mint leaves and pita for dipping.
