Beetroot and Paneer Burgers
- 500g cooked grated beetroot
- 225g paneer, crumbled
- 2 tbsp lemon juice
- 4 tbsp grated ginger
- 2 tbsp chopped chillies
- 2 tsp salt flakes
- Handful of chopped coriander
- 2 tbsp gram flour
- 1 tbsp smoked paprika
- 1 tsp fennel seeds, pounded
- ½ tsp mustard seeds
- 1 tsp ground cumin
- Veg oil, for frying
- Add the beetroot, chillies, and ginger to a pan, and fry over a medium heat until the excess moisture has evaporated. Drain in a sieve and transfer to a mixing bowl to slightly cool. Add all of the remaining ingredients, except the oil, and mix well.
- Once cooled, shape the mixture into 8 patties. Heat a drizzle of oil, and cook for 5-7 mins on each side, or until a nice crust has formed. Serve in buns with salad, raita, and chutney. Yum!
