Ingredients
Method
- 2 tbsp olive oil
- 4 sliced garlic cloves
- 500g mixed mushrooms, halved or sliced
- 2 tbsp sherry or red wine vinegar
- Salt and pepper
- Olive oil, to drizzle
- Hot paprika, to garnish
- Small bunch of parsley, chopped, to garnish
- Heat the olive oil in a large pan, then add the garlic and fry for 1 minute. Add the mushrooms, and fry on a high heat until the mushrooms are just browned. Season well with salt and pepper, and add 2 tbsp of vinegar. Continue to cook until the liquid is evaporated, then serve with a drizzle of olive oil, and sprinkle of paprika, and plenty of chopped parsley. Perfect on toast, or as a side for a steak.
