Biltong Caprese
- 350g small tomatoes, halved
- 150g fresh mozzarella (the best you can get)
- 1 pack of biltong, cut into bite-size pieces
- 3 tbsp basil pesto
- Handful of basil leaves
- Olive oil to dress
- In a large salad bowl, arrange the tomatoes, cut biltong, and slices of fresh mozzarella. Spoon over the basil pesto, and garnish with the fresh basil leaves. Drizzle with olive oil, and enjoy with some freshly baked bread. Simple and delicious!
