Black Bean and Tortilla Chip Salad
- 1 lime, juice only
- 15g chopped coriander
- ½ tsp ground cumin
- 1 jalapeno, finely chopped
- 2 tbsp oil
- 400g tin of black beans, drained
- 200g halved cherry tomatoes
- 1 chopped small lettuce
- 200g tin of sweetcorn, drained
- 1 chopped red capsicum
- Handful of tortilla chips, smashed
- 25g sunflower seeds
- Add the coriander, lime juice, cumin, oil and chopped jalapeno to a bowl, mix well and season thoroughly.
- Tip the tomatoes, beans, sweetcorn, lettuce and red capsicum into a bowl, and toss well to combine. Add the smashed tortilla chips, pour in the zesty dressing, and toss to coat. Scatter with sunflower seeds and serve immediately.
