Black Bean and Tortilla Chip Salad

  • 1 lime, juice only
  • 15g chopped coriander
  • ½ tsp ground cumin
  • 1 jalapeno, finely chopped
  • 2 tbsp oil
  • 400g tin of black beans, drained
  • 200g halved cherry tomatoes
  • 1 chopped small lettuce
  • 200g tin of sweetcorn, drained
  • 1 chopped red capsicum
  • Handful of tortilla chips, smashed
  • 25g sunflower seeds
  • Add the coriander, lime juice, cumin, oil and chopped jalapeno to a bowl, mix well and season thoroughly.
  • Tip the tomatoes, beans, sweetcorn, lettuce and red capsicum into a bowl, and toss well to combine. Add the smashed tortilla chips, pour in the zesty dressing, and toss to coat. Scatter with sunflower seeds and serve immediately.
