Ingredients
Method
- 1 tbsp olive oil
- 120g diced chorizo
- 1 bunch of spring onions, sliced
- 10g garlic paste
- 400g tin of chopped tomatoes with herbs
- 400g tin of black beans, drained
- 300g diced sweet potatoes
- 1 red capsicum, diced
- 3 bay leaves
- 300ml chicken stock
- 1 diced mango
- 15g chopped coriander
- Heat the oil in a large casserole or saucepan and cook the onions, chorizo and garlic paste for about 5 mins. Add the tomatoes, beans, sweet potato, bay leaves, capsicum and stock, season and bring to a simmer.
- Cook the stew for about 15 mins or until the sweet potatoes have softened. Stir in the coriander and mango, season again to taste, then discard the bay leaves and serve with brown rice.
