What you'll need:

  • 85g quality blue cheese, crumbled
  • 25g butter
  • 1 tbsp olive oil
  • 50g fresh spinach
  • Salt and pepper
Time: 30 minutes
Serves: 1

Method

First

Before you do anything else, preheat your oven to 180C. Take a baking tray, cover with baking paper, and place your mushrooms open-side up. Sprinkle with the blue cheese and garlic, and drizzle with the oil.Bake in the oven for 6 minutes, or until softened and golden.

Second

While cooking, melt the butter in a frying pan, and chuck in the spinach. Stir until wilted, then season liberally with salt and pepper. Remove the mushrooms from the oven, and serve with the wilted spinach draped over the top.
