Blue Cheese Mushrooms with Cranberry Relish

  • 300ml veg oil, for deep frying
  • 40 mushrooms
  • 100g flour
  • 200g crumbly blue cheese
  • 3 eggs, beaten
  • 100g breadcrumbs
  • For the Cranberry Relish
  • 2 tbsp olive oil
  • 1 chopped onion
  • 4 tbsp red wine vinegar
  • 6 tbsp brown sugar
  • 100g cranberries
  • Remove the stalks from the mushrooms and discard. Pop a spoonful of crumbled blue cheese onto each mushroom, where the stalk used to be. Place the flour, egg, and breadcrumbs into 3 bowls, and dip each mushroom into them in turn, before deep frying for 3-4 minutes or until golden. Drain on kitchen paper
  • Make your cranberry relish by heating the oil in a saucepan, and placing the onion, vinegar, cranberries and sugar into it and cooking for 5 minutes to combine. Serve in a dipping bowl next to your pile of crispy, cheesy fried mushrooms!
