Blue Cheese Stuffed Fillet Steak
- 4 thick fillet steaks
- 150g creamy blue cheese
- 1 tsp chopped rosemary
- 1 crushed garlic clove
- 4 rashers of streaky bacon
- 2 tbsp olive oil
- Mashed potatoes, to serve
- Mix the cheese, rosemary and garlic in a bowl to combine. With a sharp knife, cut a horizontal pocket into each steak and stuff with equal amounts of the cheese mixture. Wrap each steak with a rasher of bacon and secure with a cocktail stick. Rub with olive oil and season liberally.
- Heat a frying pan until very hot and fry the steaks for 3 mins on each side (for medium rare), then leave for 5 mins to rest on a board. Serve with mashed potatoes and crispy onions - delicious!
