Blue Cheese Stuffed Pork Loin

  • ½ tsp sesame oil
  • 25g cornflour
  • 1 egg white, lightly whisked
  • 125g pork loin, cut into three
  • 1 tsp each chopped parsley and sage
  • 1 tsp chopped spring onion
  • 25g blue cheese
  • 55g breadcrumbs
  • 1 tbsp olive oil
  • Preheat the oven to 220C. Whisk together the egg, cornflour, and sesame oil in a bowl to make a thick batter. With a very sharp knife, make a pocket in each of the three pork loin pieces, and set aside.
  • In a bowl, combine the herbs, spring onion, and cheese. Stuff this mixture into each of the pork pockets. Dip the stuffed pork pieces into the batter, then roll in breadcrumbs to coat. Heat up the oil in a frying pan, and fry your pork pieces for 2-3 mins on each side, or until golden. Transfer to the oven, and cook for 10 mins more. Serve with steamed kale or broccoli.
