Blue Cheese Stuffed Pork Loin
- 1⁄2 tsp sesame oil
- 25g cornflour
- 1 egg white, lightly whisked
- 125g piece of pork loin, cut into three equal pieces
- 1 tsp chopped parsley and sage
- 1 tsp finely chopped spring onion
- 25g blue cheese
- 55g breadcrumbs
- 1 tbsp olive oil
- Preheat the oven to 220C, and place the cornflour, egg, and sesame oil in a bowl, and whisk together to make a batter.
- With your sharpest knife, cut an incision into each piece of pork loin to create a pocket, then mix together the cheese, herbs, and spring onion, and stuff this mixture into each pocket. Dip the stuffed pork first in the batter, then into the breadcrumbs, then fry in olive oil for 3 minutes. Finally, transfer the pork to the oven for 10 minutes, and serve hot with green beans.
