Bratwurst with Sauerkraut and Seeded Mustard

  • 4 good-quality bratwurst sausages
  • 400 g sauerkraut, drained
  • 1 brown onion, finely sliced
  • 1 tbsp unsalted butter
  • 1 tsp caraway seeds
  • 4 crusty rolls or hot dog buns
  • 3 tbsp seeded mustard
  • Salt and pepper
  • Melt butter in a heavy pan over medium heat. Add onion and cook slowly for 15 minutes, stirring often, until golden and caramelised. Add sauerkraut and caraway seeds to the pan. Stir through the onions and cook for 5 minutes. Season to taste and keep warm over low heat.
  • Cook bratwurst on a barbecue or chargrill pan over medium-high heat for 10 to 12 minutes, turning occasionally, until well coloured and cooked through. Split rolls and serve bratwurst loaded with sauerkraut mixture and a generous spoonful of seeded mustard.
