Brie, Bacon, and Berry Bites
- 2 x 48x25cm sheets of filo pastry
- 55g butter, melted
- 150g brie
- 2 tsp wholegrain mustard
- 100g cranberry sauce
- 75g smoked bacon, cut into 1cm strips
- Black pepper
- Preheat the oven to 190C. Take a sheet of filo, and cut in half (this makes it easier to work with). Take half the sheet, brush with melted butter, and then cut into approximately 20 x 5cm squares. Take three squares, and place on top of each other at a slight angle to make a star shape. Repeat.
- Push the stacks of pastry stars into a mini muffin tin, forming an empty pastry case. Cut the brie into 24 small pieces, and place a chunk into each pastry case. Dot with a small amount of mustard, add a little cranberry sauce, and top with strips of bacon. Bake for 12 minutes or until the bacon is cooked, the cheese is melted, and the pastry is golden. Serve warm, and enjoy!
