Broccoli and Sausage Pasta Salad
- 200g small Cumberland sausages
- 1 tbsp olive oil
- 1 chopped onion
- 2 chopped garlic cloves
- 250g broccoli, cut into florets
- 250g wholemeal penne
- Pinch of chilli flakes
- 25g rocket leaves
- Grill the sausages until golden brown and cooked through. Meanwhile, heat the oil in a pan and cook the onion for 6 mins to soften, then add the garlic and fry for 1 min more. Bring a pan of water to the boil, cook the broccoli for 4 mins, then drain and set aside.
- Add the pasta to the broccoli water, and cook according to pack instructions. Drain, and return to the pan. Chop the sausages into 2 cml pieces, toss in the pasta, then add the chopped broccoli, garlic, onions, and chilli flakes. Season well, and toss together with the rocket.
