Bruschetta with Mozzarella and Rocket Drizzle
- 12 slices of ciabatta, toasted
- 1 garlic clove
- 25g rocket leaves
- 1 tbsp toasted almond flakes
- 1 red chilli, deseeded and chopped
- 2 tbsp olive oil
- ½ lemon, juice only
- 375g quality mozzarella, torn
- Whizz the rocket, almonds, garlic and chilli in a blender to form a coarse paste. Add the oil and lemon juice, then whizz again with a few splashes of water to make a dressing. Season well.
- Top the ciabatta toasts with mozzarella, and drizzle over the rocket dressing. Serve immediately.
