Brussels Sprouts Slaw
- 250g Brussels sprouts, trimmed and finely sliced
- 1 red onion, thinly sliced
- 2 carrots, grated
- 100g cashew nuts, chopped
- 1 tsp cumin seeds
- 100g Greek yoghurt
- 50g mayonnaise
- 1 tbsp wholegrain mustard
- 1⁄2 lemon, juice and zest
- Large handful of chives, chopped
- Large handful of parsley, chopped
- Take a bowl, and chuck in the sprouts, onion, carrot, cashews, and cumin seeds, and mix well.
- In a second, smaller bowl, add the yoghurt, mayo, mustard, lemon juice and zest, and stir to fully combine. Tip this bowl into the first bowl, and mix well. Add more yoghurt and mayo if you want it extra creamy, then serve with your favourite seafood dish.
