Buffalo Cauliflower Wings with Blue Cheese Dip

Ingredients

Method

  • 1 large cauliflower, cut into florets
  • 120g plain flour
  • 150ml milk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 100g hot sauce
  • 60g butter, melted
  • 1 tbsp honey
  • 100g blue cheese, crumbled
  • 100g soured cream
  • 2 tbsp mayonnaise
  • 2 celery sticks, cut into batons
  • Heat the oven to 220C. Whisk the flour, milk, garlic powder, smoked paprika and a pinch of salt into a smooth batter. Turn the cauliflower through it, letting the excess drip off, then spread on a lined tray and bake for 25 minutes.
  • Stir the hot sauce, melted butter and honey together. Brush it generously over the cauliflower and return it to the oven for 12 to 15 minutes, until sticky and charred at the edges.
  • Mash the blue cheese with the soured cream and mayonnaise, leaving some lumps. Pile the cauliflower onto a platter and serve hot with the dip and celery batons.
