Buffalo-Style Cauliflower Wings

  • 1 tbsp smoked paprika
  • ½ tbsp ground cumin
  • 1 tsp garlic powder
  • 100g flour
  • 200ml kefir
  • 500g cauliflower florets
  • 80g hot sauce
  • 1.5 tbsp maple syrup
  • 1 tbsp butter
  • Dipping sauces, to serve
  • Preheat the oven to 220C and line a baking tray with paper. Mix the spices and flour with a pinch of salt in a large bowl, then whisk through the kefir to make a batter. Tip in the cauliflower florets and coat well, then spread them onto the baking tray and cook for 25 mins, turning halfway through, until crispy at the edges.
  • Warm up the hot sauce, butter and maple syrup in a small pan over a low heat for 4 mins, then brush liberally over the cauliflower before baking for another 10 mins. Serve hot with your favourite dipping sauces on the side.
