What you'll need:

  • 600g boerewors sausages (although you can make this recipe with any type of sausage)
  • 10-12 cherry tomatoes, quartered
  • 1 small red onion, finely chopped
  • 2 tsp sweet chilli sauce
  • 2 tsp red wine vinegar
  • 4 big romaine lettuce leaves (these will be your ‘buns’)
  • 4 tsp creme fraiche
  • 4 tsp wholegrain mustard
  • A handful of basil leaves

Method

First

This is essentially a bunless hot dog, so the first step of your recipe is going to involve cooking up those lovely sausages. You can do this on a grill, in a pan, or on a barbecue - whichever way suits you best. While the sausages are sizzling away, make a salsa by combining the tomatoes, sweet chilli, vinegar, and plenty of seasoning.

Second

Trim and wash your biggest romaine lettuce leaves, and spread a dollop of mustard along the centre of each. Add a sausage to each leaf, top with the salsa, then add a bit of creme fraiche and some basil leaves to finish. Delicious!
