Butter Bean and Tomato Salad
- 400g tin of butter beans, drained
- 500g cherry tomatoes, quartered
- 2 yellow courgettes, diced
- 1 red onion, chopped
- 20g chopped coriander
- 2 tbsp lemon juice
- 3 tbsp olive oil
- 1 tsp cumin, ground
- Simply tip all of the ingredients into a salad bowl, season well with salt and pepper, and give it a good mix to bruise the tomatoes a little. Serve at room temperature with crusty bread.
