Ingredients
Method
- 800g chicken thighs, skin removed
- 1 red onion, cut into wedges
- 1 zucchini, thickly sliced
- 500g sweet potatoes, peeled and chopped into chunks
- 25g chopped walnuts
- 1 tbsp Cajun seasoning mix
- 1 tbsp olive oil
- 1 tbsp honey
- Preheat the oven to 200C. Place the chicken in a roasting tin with the vegetables and walnuts, then mix the Cajun seasoning, honey and oil in a small bowl and drizzle over the chicken and veggies, tossing to coat.
- Roast everything for 30 mins or until the vegetables are tender and the chicken is browned and cooked through. Divide between plates, and serve with steamed greens or flatbreads. Easy!
