What you'll need: * 1 tbsp olive oil [https://www.bbcgoodfood.com/glossary/olive-oil] * 1 diced white onion * 1 sliced red pepper * 2 crushed garlic cloves * 2 chopped chicken breasts * 75g sliced chorizo [https://www.bbcgoodfood.com/glossary/chorizo] * 1 tbsp Cajun seasoning [http://allrecipes.com/recipe/152881/simple-cajun-seasoning/
What you'll need:
- 1 tbsp olive oil
- 1 diced white onion
- 1 sliced red pepper
- 2 crushed garlic cloves
- 2 chopped chicken breasts
- 75g sliced chorizo
- 1 tbsp Cajun seasoning
- 250g long grain rice
- 350ml good chicken stock
- 400g can plum tomato
Serves: 4
Method
First
Heat up your oil in a large pan, and brown the chicken for 7-8 minutes, until golden brown. Once cooked through, take the chicken out of the pan, and set aside.
Second
Into the same pan, soften the onion for 3-4 minutes, then add the pepper, Cajun season, chorizo and garlic. Cook for another 5 minutes.
Third
Add the rice and chicken, stock and tomatoes. Season well, then cover the pan and cook for 20 minutes or until the rice is cooked and tender.
