  • 1 tbsp oil
  • 1 celery stalk, chopped
  • 3 carrots, chopped
  • 250g sliced mixed capsicums
  • 4 sliced spring onions, green and white parts separated
  • 500g beef mince
  • 2 tsp Cajun seasoning
  • 1 tsp tomato puree
  • 500g cooked brown rice
  • Heat the oil in a large casserole and cook the celery, capsicums, carrots and the whites of the spring onions for 10 mins until softened. Stir in the mince and cook for 10 mins, then add the Cajun seasoning and tomato puree. Stir to coat, then add the cooked rice with 4 tbsp of water. Stir to combine, then cook until piping hot. Scatter with spring onions, and serve.
